What happens to the products already in my Shopify store?

Nothing, unless someone on your team publishes. Invoe reads your catalog so it can recognize reorders and match incoming product to what you already sell. It does not rename, retag, reprice, or delete anything on its own, and it never deletes a Shopify product at all. The only time Invoe writes to Shopify is when a person on your team pushes a specific product live, and then it only touches that product.
